I have it set up that people who are just guests can post in the shout box.  I have one post I would like to know who made it. Just so I can get in touch with them with the information they requested.  Is there a way I can get atleast their IP Address, in the logs or what not for the shoutbox?

Check your logs for guests who were online at the time of the shoubox post. Hopefully, there were only a few. It should help narrow things down a bit.
