Block Header/Title Bar Colors

How do you change it? I'm pretty sure it is no longer an image, especially since Curves. So, how do I change the color of the headers?

You can change them in the block settings to use several different settings for the color/image etc.

I can only see styles and a few shades of black and gray but nothing to change to any other colors.

Well if you want to change it to a color that is not within the current theme CSS, then you'll have to alter the CSS to get what you want.

Ah! Thought so. Will I have to add new styles or just change the old and which one(s)?

Well, depending on which block layout you choose. After you have chosen your preference, take a look at the classes that are used with firebug.
