Editing Block Contents?

I know, lots of silly questions from me today, but could somebody help me here please?

How do you edit the contents of blocks, for instance I can get a menu block with a title but I can't put text into the main bit of it.

Also can you make it so less info is displayed on the user block?

A number of the blocks are predefined (all except phpbox, htmlbox, & scriptbox, IIRC). This means that you cannot edit the contents (unless you are willing to edit the code). Some of the blocks will give you various options to select from (userbox, recentbox, SSIbox, etc.), but you still cannot edit it fully.

However, the catmenu (i.e. the Content Menu) block in somewhat of an exception. To put links in it, you will want to use the Menu Manager, and add menu items (and then actually activating them). The positioning is handled in a manner like the block positioning, and there is a field in each item (when you add the item) consisting of 4 radio buttons. These determine the indentation of the menu item (i.e. the first radio button is aligned to the left,  the second is in a couple of spaces, the third is in a few more, etc..).
