Yes;
Admin>TinyPortal>Block Manager>Menu Manager... in that list you can make any additions/deletions you need to do, on the right side of the page you can un-check an entry and it won't show in the sitemap.

You can't. You'll need to either use the menu manager or create a custom menu.
