Dividing a Menu by categories.

Hello everyone, please pardon me if I am placing this into the wrong section. Mods, please move if necessary!

I am building a site using your Apollo theme. I am building a Links menu and am having difficulties making sections inside the menu. For example one section is for Organisational Websites, while another is for Reference and Publication Websites, while yet another is for Government Official Home pages. This is quite a large undertaking as I am making this for the National Association of Letter Carriers Leadership Program. I absolutely love your Tiny Portal, and the SMF software. I just want to make this look very good. Thanks in advance if someone can assist me.
