Is it possible to delete the downloads link forum the sitemap?

Yes;
Admin>TinyPortal>Block Manager>Menu Manager... in that list you can make any additions/deletions you need to do, on the right side of the page you can un-check an entry and it won't show in the sitemap.

EDIT: Whoa! I'm just toooo slow this morning, first Ich and now G6 is beating me to the post. ;)

You can't. You'll need to either use the menu manager or create a custom menu.
